The record at a glance
September 17 advisory meeting, state on Sep 28, 2026 2 decisions waiting Lease renegotiation waiting 11 days
Each of the seven recommendations Tallgrove Accounting Partners made to Pennock Hospitality Group on September 17, with the owner's decision, the days it has waited and who acts next, so the Harbor Table lease renegotiation stops waiting. Prepared by the Tallgrove advisory lead for Desmond Vandermolen, owner of Pennock Hospitality Group. The record is updated after each advisory meeting and read again at the October 9 check-in. Issued Thursday, October 1, 2026.
Seven recommendations and where each stands
Every recommendation from the meeting became one decision card with an owner, a due date and the financial evidence behind it. Five have a decision from Desmond. Two are waiting. Read the Days column first: a recommendation that has waited more than a week needs a person to act, not a reminder.
The table below adds what the block does not show: the evidence each recommendation rests on, the next step and its date. Days are counted to Monday, September 28.
| Recommendation | Decision | Evidence it rests on | Next step | Due |
|---|---|---|---|---|
| Harbor Table lease renegotiation | Waiting 11 days | August Harbor Table pack, landlord renewal figure (not yet received) | Desmond obtains the renewal figure, Celeste records the decision | Oct 9 |
| Insurance renewal comparison | Waiting 8 days | Insurance renewal quotes, comparison delivered | Desmond chooses, Tobias records the choice | Oct 9 |
| Catering pricing | Accepted | Catering sales and cost by event, August | Celeste starts the pricing review | Oct 16 |
| Vendor payment terms | Accepted | Vendor statements, August | Tobias lists terms by supplier | Oct 14 |
| Saltmarsh Grill labor scheduling review | Accepted | Saltmarsh Grill payroll register and point-of-sale reports | Celeste agrees the review dates | Oct 16 |
| Gift card liability tracking | Accepted | Gift card sales and redemptions, August | Tobias sets up the monthly schedule | Oct 30 |
| Fig and Fennel menu price review | Declined | Fig and Fennel point-of-sale item sales | None, closed with the reason on the card held by Tallgrove | Closed |
What each state means
A recommendation is in exactly one state at a time. The state changes only when Desmond answers or when the work is finished, and Tobias Rennert records the change the same day.
- Waiting for the client
- The recommendation and its evidence were delivered and the owner has not answered. Age counts from the day it was made, or from the day its comparison was delivered. An item can also be waiting on a third party's figure, as the lease renegotiation waits on the landlord. Two recommendations are in this state.
- Accepted
- Desmond agreed. The card gets an owner, a due date and a first step, and the work is in progress. Four recommendations are in this state.
- Declined
- Desmond chose not to act. The reason is written on the card and the recommendation is closed, not hidden. One recommendation is in this state.
- Completed
- The accepted work is done and the result is shown to Desmond. None of the four accepted actions is completed yet.
- Reopened
- A closed or accepted recommendation comes back because its facts changed. It starts again at Waiting for the client.
"I have asked the landlord twice. I will ask again in writing and I will tell you the day an answer comes in, so you are not waiting on me without knowing it."
Desmond Vandermolen, Owner, Pennock Hospitality Group
How a recommendation becomes a decision
This is the path every card follows. The two cards that are waiting sit between "decision requested" and a recorded answer.
The waterfall shows the same count as a path. Seven were recommended, one was declined and two are waiting, which leaves four accepted.
The two decisions still open
Choose a recommendation to see what Desmond is deciding and what happens after.
Harbor Table lease
Waiting 11 days Tallgrove owner: Celeste Deverell
Deciding. Whether Pennock goes ahead with a lease renegotiation for Harbor Table once the landlord's renewal figure is known.
Needed first. The landlord's renewal figure. Without it the comparison with current occupancy cost cannot be prepared.
If the figure arrives by Oct 9. Celeste Deverell compares it with the current cost and Desmond decides at the check-in. If it does not. The check-in records the decision as waiting on the landlord, with a new date set that day.
Insurance renewal
Waiting 8 days Tallgrove owner: Tobias Rennert
Deciding. Which of the quotes in the delivered comparison Pennock takes forward at renewal, or whether to ask for new quotes.
Needed first. Nothing more from Tallgrove. The comparison was delivered and the next move is Desmond's.
If Desmond chooses by Oct 9. Tobias Rennert records the choice and the card moves to Accepted. If he wants new quotes. Tobias reopens the comparison and sets a new due date.
